Easy Peasy Bircher Muesli

Developed around the 1900's, Bircher muesli is essentially a fruit and oat muesli. As the oats are raw, the muesli takes some soaking time so bircher muesli is best prepared the night before (plus makes it super quick in the morning). I originally got into Bircher muesli when I grabbed a bag at Waitrose - I loved the simplicity of it and if I forgot to prepare the night before it sufficed to soak for 30 mins (though not quite so tasty). But Waitrose seem to have stopped stocking it and you know I like to make things from scratch where I can so I Googled but couldn't find a recipe that worked for me (I don't 'do' milk or would prefer not to use apple juice).

So with a bit of trial and error I've concocted a bircher that works for me, it's nutritious and fits into my busy life. I always have this the morning of a shoot, when I'm always running out of time. The addition of chai seeds elevates this to super muesli and you'll find it totally sets you up for the day.

Ingredients

  • 100g rolled oats

  • 1 apple, cored and grated (unpeeled)

  • 1 tbsp chai seeds

  • 1 tbsp mixed seeds

  • 1 handful sultanas

  • 200g organic yoghurt (natural or flavoured)

  • 1 tsp ground cinnamon

  • 1 tsp local honey (optional if you prefer less sweet)

  • Juice 1/2 lemon

  • Egg cup full of water

Instructions

  1. Put all your ingredients into a bowl or pyrex, mix together and soak overnight, or at least 45 mins.

  2. Use toppings of your choice - toasted coconut, chopped pear, blackberries, blueberries, strawberries etc.

  3. Eat and be well! You can either share this with someone else or keep half for the day after.
